♥ cold cucumber soup with smoked salmon, dill and sesam

What’s better than a bowl with ice cold soup on the hottest day off the year? Absolutely nothing! It’s smoking hot here in Belgium. In the meantime I have to do the nightshifts at work so it’s important to eat proper food. Most off the time I don’t feel like eating because of the warmth. So I started searching for some cold meals and when I saw this soup I could jump for joy!


Let’s cool down!

° 2 cucumbers

° 1 chopped onion

° 1 garlic clove

° 2 tablespoons chopped dill

° 2 teaspoons sesam oil

° 300 gram yogurt

° 150 gram smoked salmon


Peel the cucumber and cut it in half lengthwise. Remove the seeds with a spoon and keep 125 gram for the finishing touch. Blend the cucumber, onion, garlic, dill, sesam oil and yogurt. Season it with salt and peper and put it in the fridge.
Cut the remaining cucumber into small cubes and sprinkle it with the smoked salmon over the cold soup.
