♥ Blueberry and yohurt loaf – Donna Hay

What brings more joy than losing yourself in a recipe? To see, smell and most of all to taste how a few simple ingredients can organise a party in your mouth. Today we make a Donna Hay loaf. Donna is an Australian food stylist and writer who has written already a bookcase full of cookbooks. Her books have the most amazing pictures and simple dishes with lots of flavor.

° 150 gram melted butter

° 220 gram sugar

° 225 gram self-raising flour

° 2 eggs

° 140 gram Greek yohurt

° 1 tablespoon fijn grated lemon zest

° 1 teaspoon vanille extract

° 125 gram fresh blueberries

° powdered sugar for dusting

Before I begin I preheat the oven on 160°c. Place butter, sugar, eggs, yohurt, lemon zest and vanilla extract in a bowl and whisk to combine. Add the flour and mix until well combined. Add the blueberries and whisk. Put everything in a baking tin lined with baking paper. Smooth the top with a knife and bake for one hour. Let it cool down for 10 minutes in the tin before turning it out on a wire rack. Dust with the powdered sugar and extra blueberries.
